Garden Abundance — What to Do With All Those Tomatoes and Cucumbers
For those of you who are gardening, it’s happening: our gardens are overflowing. If you’re like me, the fridge is full.
Your garden did its job. Maybe a little too well. 😄
The tomatoes are ripening faster than you can eat them. The cucumbers are multiplying like they're on a mission. And you're standing in your kitchen wondering how many salads one family can eat in a week.
Sound familiar? Good. Because this is the best problem to have — and I've got solutions.
TOMATOES — More Than Just a Salad Ingredient 🍅
When the tomatoes are coming in fast, here's what to do:
Fresh and fast:
Bruschetta — chop Roma tomatoes, toss with Sunset Gourmet Bruschetta Seasoning Mix and olive oil, pile on crackers with Roasted Garlic Aioli. Done. → Get the full recipe
Blueberry Mango Salsa — swap some mango for chopped tomatoes and you've got a summer salsa that works on everything → Get the full recipe
Caprese snack plate — thick slices of tomato, fresh mozzarella, basil, olive oil, and a sprinkle of Sunset Seasoned Salt. Five minutes.
Greek Chicken Salad Jar — halved cherry tomatoes layered into your weekly mason jar lunches → Get the full recipe
Cook it down:
Homemade marinara — roast a sheet pan of halved tomatoes with garlic and olive oil at 400°F for 30 minutes. Blend. Season with Oh! So Garlic and Oh! So Onion. Freeze in portions. January pasta night will thank you.
Sheet pan dinners — toss cherry tomatoes onto any sheet pan recipe. They roast down into sweet, caramelized pockets of flavour. → Try the Mediterranean Sheet-Pan Chicken
Slow roasted tomatoes — halve them, drizzle with olive oil, sprinkle with salt and any Sunset Gourmet seasoning, roast at 275°F for 2 hours. Store in olive oil in the fridge for up to a week. Incredible on pasta, toast, eggs, or straight from the jar.
Freeze for later:
Wash and dry. Lay whole on a parchment-lined sheet pan. Freeze solid. Transfer to ziplock bags. Use in soups, sauces, and stews all winter. The skins slip right off after thawing.
CUCUMBERS — Cool, Crunchy, and Ridiculously Versatile 🥒
When the cucumbers won't stop growing, here's what to do:
Fresh and fast:
Dip vessels — slice thick rounds and use as dippers for your Oh! So Onion Dip, Jalapeño Ranch Dill Pickle Dip, or Tropical Chicken Cranberry Dip. Crunchy, hydrating, zero carbs. → Get the dip recipes
Greek Chicken Salad Jars — chopped cucumber is one of the base layers. Stays crisp for 3 days sealed in the jar. → Get the full recipe
Smash cucumber salad — smash cucumbers with the flat side of a knife, tear into rough pieces, toss with soy sauce, rice vinegar, sesame oil, and Sesame Ginger Blend. Incredible as a side dish.
Salmon bowl topping — sliced cucumber adds cool crunch to any warm bowl. → Try the Lemony Dill Salmon Bowl
Tzatziki — grate cucumber into Greek yogurt with lemon juice, garlic, and a pinch of salt. Serve with grilled chicken or as a dip. More fun recipes here
Preserve them:
Quick fridge pickles — slice cucumbers into a jar. Cover with equal parts water and white vinegar, 1 tbsp salt, 1 tbsp sugar, and 1 tbsp Jalapeño Ranch Dill Pickle Seasoning Blend. Refrigerate 24 hours. Homemade pickles that taste better than store-bought.
Cucumber water — slice thin, add to a pitcher of water with mint or lemon. Hydrating, refreshing, and it makes drinking water feel like a spa day.
THE COMBO — When Tomatoes and Cucumbers Work Together
Any salad — the two best garden vegetables on the same plate. Add greens, cheese, nuts, and a Sunset Gourmet dressing blend.
Gazpacho — blend tomatoes, cucumber, red onion, olive oil, and vinegar for a cold summer soup. Season with Oh! So Garlic.
Mediterranean bowls — chopped tomatoes, cucumber, red onion, olives, and feta over rice with the Mediterranean Greek Seasoning dressing. → Try the Greek Chicken Salad Jar
Indian Inspired Hummus topping — fresh tomatoes and cucumber piled on top of that Butter Chicken Hummus. → Get the full recipe
Bruschetta with cucumber slices — skip the crackers entirely. Use thick cucumber rounds as the base. Top with bruschetta mixture. Low carb. High flavour.
You just turned a garden problem into a kitchen opportunity.
Every tomato ripening on your counter. Every cucumber hiding under the leaves. They're not a burden — they're ingredients waiting to become something delicious. You don't need more recipes. You just need to see what's already in front of you differently. That's the shift. And your kitchen — and your body — will feel it. 💚
Kitchen Wisdom 💡
Freeze what you can't eat now. Tomatoes freeze whole — no blanching needed. Grate extra cucumber and freeze in portions for tzatziki and smoothies all winter.
Every dip is a cucumber opportunity. Any dip on your table pairs perfectly with thick cucumber rounds. Crunchy, hydrating, and no crackers needed.
Seasoning blends turn simple produce into meals. A tomato is just a tomato until you add Bruschetta Seasoning. A cucumber is just a cucumber until you add Jalapeño Ranch Dill Pickle Blend. The blends are the shortcut.
FAQ
What's the best way to store fresh tomatoes? Counter — never the fridge. Cold kills the flavour and texture. Only refrigerate once they're cut.
How long do cucumbers last? Whole in the fridge, about a week. Wrap in a paper towel inside a loose bag to absorb excess moisture and they'll last longer.
