Indian Inspired Butter Chicken Hummus

My friend Jacqueline McGrath shared this with me and told me I could pass it along — because that's what good food people do. They share what's good.
And friend — this is SO good.
Creamy butter chicken hummus. Crunchy roasted chickpeas. Crispy garlicky olives. Fresh tomatoes, cucumber, and red onion piled on top. It's not just hummus — it's a whole experience on a plate.
The first time I made it I stood at the counter eating it straight off the platter before it even made it to the table. No regrets.
Why this platter works for your body
This isn't just a pretty appetiser. Every component is delivering something your body actually needs.
Chickpeas deliver plant-based protein and fibre — the combination that keeps blood sugar steady and your gut happy. Olive oil delivers anti-inflammatory healthy fats. Tahini adds calcium and iron. Tomatoes deliver lycopene. Cucumber adds hydration. Red onion feeds your microbiome.

What you need
Serves 6–8 as an appetiser · Prep: 15 min · Bake: 25 min
For the crunchy olives:
1 cup olives
1 tbsp olive oil
1 tsp YGY Easy Eats Roasted Garlic Aioli Seasoning ← Youngevity
For the crunchy chickpeas:
½ cup chickpeas (reserved from the can)
1 tbsp YGY Easy Eats Butter Chicken Blend ← Youngevity
1 tbsp olive oil
For the hummus:
1 can chickpeas, rinsed and drained (minus the ½ cup reserved for crunchy chickpeas)
2–3 tbsp YGY Easy Eats Butter Chicken Blend ← Youngevity
1 tbsp tahini paste
¼ cup water
¼ cup olive oil
Juice of ½ lemon
For the topping:
¾ cup cocktail tomatoes, halved
¼ cup red onion, chopped
½ cup cucumber, chopped
Juice of ½ lemon
Make it
Preheat — Set oven to 400°F. Line a sheet pan with a silicone liner or parchment paper.
Prep the crunchy olives — Toss olives with olive oil and Roasted Garlic Aioli Seasoning. Spread on one side of the sheet pan.
Prep the crunchy chickpeas — Toss ½ cup chickpeas with Butter Chicken Blend and olive oil. Spread on the other side of the sheet pan.
Bake — Roast both together for 25 minutes until crispy. Let cool completely before using.
Make the hummus — In a food processor or blender combine the remaining chickpeas, Butter Chicken Blend, tahini, water, olive oil, and lemon juice. Blend until smooth and creamy.
Plate — Spread hummus on a platter or shallow bowl. Top with halved tomatoes, chopped red onion, cucumber, and a squeeze of lemon juice.
Finish — Scatter the crunchy roasted chickpeas and crispy olives over the top. Serve with crackers, pita, or fresh veggies.
💡 Pro tip: Let the roasted chickpeas and olives cool completely before adding them on top. Warm toppings on cool hummus will make the hummus lose its texture.

FAQ
Can I make this ahead?
Make the hummus up to 2 days ahead and refrigerate. Roast the chickpeas and olives the day you're serving — they lose their crunch if stored overnight. Add the fresh toppings right before serving.
Can I use store-bought hummus instead?
You can — but stir in 1–2 tbsp of the Butter Chicken Blend to give it the Indian-inspired flavour. Homemade is creamier and the flavour is deeper. Worth the 5 minutes in the blender.
