Two things happen every July in this kitchen.

Blueberries come in by the bucket — from the farm, the market, or the freezer. And zucchini takes over every garden in the neighbourhood. Your neighbour is leaving bags of it on your doorstep. Your coworker is bringing it to the office. Your garden is producing more than any human family could reasonably eat.

This muffin solves both of those problems. Beautifully.

Every summer I watch people stare at mountains of zucchini wondering what to do with it all. Stir fry again? Another zucchini boat? How much ratatouille can one family eat?

Baking. That's the answer.

Grated zucchini disappears into muffin batter. It adds incredible moisture — which means your muffins stay soft for days instead of drying out by morning. It adds nutrition without changing the flavour. And it uses up that garden surplus in the most delicious way possible.

Here's my trick — when the zucchini is coming in fast, I grate a big batch and freeze it in 1-cup portions in ziplock bags. Lay them flat in the freezer. When I want to bake, I thaw one bag and squeeze out the excess moisture. Muffins in January from July's zucchini. Your future self will thank you.

And the muffins themselves? Make a double batch. Freeze them. Pull one or two out the night before and they're thawed and ready by morning. Breakfast handled for the entire week from one baking session. 😄

Fresh blueberries or frozen — both work

Pick your own at the farm if you can — there's nothing like it. Early morning, songbirds, rows of berries, and the peace of doing something simple with your hands.

But frozen blueberries work beautifully in these muffins too. Don't thaw them — add them frozen straight into the batter. They hold their shape better during baking and won't bleed as much purple into the batter. If using frozen, fold them in at the very end and work quickly.

Fresh berries give you distinct pockets of juicy fruit. Frozen berries give you a more even blueberry flavour throughout. Both are delicious. Use what you have.

What you need

Makes 12 muffins · Prep: 15 min · Bake: 20–25 min

Dry:

  • 1½ cups flour

  • ½ cup ground flax

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

Wet:

  • 1 small banana, mashed

  • 1 cup zucchini, grated

  • 1 egg

  • ½ cup vegetable oil

  • 1 tbsp fresh lemon juice

  • Zest of 1 lemon

  • ½ cup packed brown sugar

  • ½ cup white sugar

Mix-ins:

  • 1 cup fresh blueberries (or frozen — don't thaw)

Make it

  1. Preheat — Set oven to 350°F. Line a muffin tin with liners or grease well.

  2. Mix dry — Whisk together flour, ground flax, baking soda, baking powder, and salt in a large bowl.

  3. Mix wet — In a separate bowl combine mashed banana, grated zucchini, egg, oil, lemon juice, lemon zest, brown sugar, and white sugar. Stir until well combined.

  4. Combine — Pour wet ingredients into dry. Stir until just combined — don't overmix. A few lumps are fine. Overmixed muffins are tough muffins.

  5. Fold — Gently fold in blueberries.

  6. Fill — Divide batter evenly into muffin cups, filling ¾ full.

  7. Bake — 20–25 minutes until a toothpick inserted in the centre comes out clean. For mini muffins reduce bake time to 12–15 minutes — watch them closely.

  8. Cool — Let rest 5 minutes in the tin before removing.

💡 Pro tip: Don't overbake. Pull them when the toothpick comes out with just a few moist crumbs — not wet batter, not bone dry. They continue cooking as they cool. The difference between a good muffin and a great muffin is those last 2 minutes.
