Harvest Hug Pumpkin Muffins

These sugar-free muffins are packed with real pumpkin, clean protein, and cozy fall flavours. Perfect for breakfast, post-workout, or a wholesome snack.
Ingredients
1 cup pumpkin purée
2 eggs
½ cup nut butter (any kind you love — almond, cashew, or peanut)
¼ cup almond flour
1 tsp vanilla extract
1 tsp cinnamon
1 tsp ginger
1 tsp baking powder
¼ tsp salt
½ cup pumpkin seeds or chopped nuts (optional)
¼ cup maple syrup (optional for mild sweetness)
Instructions
Preheat oven to 350°F (175°C).
Line or lightly grease a muffin tin.
In a medium bowl, whisk together pumpkin purée, eggs, nut butter, vanilla, and protein powder until smooth.
Add almond flour, baking powder, cinnamon, ginger, and salt. Stir until combined.
Fold in pumpkin seeds or nuts if using.
Divide batter evenly into muffin cups.
Bake for 20 to 25 minutes, or until a toothpick inserted in the centre comes out clean.

Tip:
