Real Talk — why I stopped buying crackers
I used to spend $6–$8 on a box of "healthy" seed crackers from the grocery store. Every week. Then one day I flipped the box over and actually read what was in them. Half the ingredients I couldn't pronounce and the other half I didn't want in my body.
So I made my own. One batch. One pan. And the entire family loved them. My husband now requests them for his lunch — broken up alongside cheese and whatever dip is in the fridge.

What you need
Makes 1 large sheet · Prep: 15 min · Bake: 45–60 min
Base:
1 cup raw pumpkin seeds
½ cup ground flaxseed
½ cup chia seeds
½ cup psyllium husk
1 cup boiling water
Seasoning:
1 tsp sea salt
½ tsp black pepper
1 tbsp Onion Garlic & Herb Seasoning ← Sunset Gourmet
OR 1 tbsp Caesar Dressing Blend ← Youngevity
Optional add-ins (have fun with these):
½ cup chopped olives
½ cup dried cranberries
Sesame seeds
Hemp hearts
Sun-dried tomatoes
Everything bagel seasoning
Make it
Preheat — Set oven to 300°F. Line a baking sheet with parchment paper.
Mix — Combine pumpkin seeds, flaxseed, chia seeds, psyllium husk, salt, pepper, and your chosen seasoning blend in a large bowl. Stir in olives and/or cranberries if using.
Hydrate — Pour boiling water over the mixture and stir well. Let sit 5–10 minutes until thickened and gel-like.
Spread — Transfer to lined baking sheet. Spread as thin as possible with a spatula.
Bake — Bake 45–60 minutes until firm and crisp. If edges crisp faster than the centre lower the heat slightly and continue baking.
Cool & break — Cool completely on the pan. Then break into crackers.
💡 Pro tip: Thinner = crispier. Spend the extra minute spreading the mixture out as thin and even as you can. It makes all the difference.

Sunday batch is the move. Make one sheet on Sunday and you've got crackers for the whole week. Stored in an airtight container they stay crisp for 5–7 days.
Change up the add-ins every week. Olives and rosemary one week. Cranberries and cinnamon the next. Sun-dried tomatoes and Italian seasoning after that. Same base recipe — completely different cracker every time. Have fun with it.

The chia seeds and flaxseed create a natural gel when combined with boiling water. That gel binds everything together and creates the crispy texture. No oil needed. Your body gets the healthy fats from the seeds themselves.
How do I store them?
Cool completely first. Then store in an airtight container at room temperature. They'll stay crisp for 5–7 days. Don't seal them while they're still warm — trapped steam makes them soft.
Can I make these sweet instead of savoury?
Absolutely — skip the savoury seasoning and add a pinch of cinnamon, a drizzle of maple syrup to the water, and dried cranberries or chopped dates. Incredible with yogurt or cottage cheese.
