What you need

For the chicken:
1½ lbs boneless skinless chicken breasts or thighs
2 tbsp YGY Easy Eats Chicken Parmesan Blend ← Youngevity
¼ cup olive oil
⅓ cup breadcrumbs
For the veggies:
2 large zucchini, halved lengthwise and cut into 1-inch pieces
1 pint grape tomatoes
To finish:
½ cup marinara sauce (homemade or store-bought)
½ cup shredded mozzarella cheese
Make it
Prep — Preheat oven to 425°F. Line a sheet pan with parchment paper.
Season — Pound chicken to ¼-inch thickness. Toss with Chicken Parmesan Blend, olive oil, and breadcrumbs until evenly coated.
Arrange — Place chicken in a single layer on the pan. Toss zucchini and grape tomatoes in the remaining seasoning and spread around the chicken.
Bake — 10 minutes until chicken is nearly cooked through and vegetables are starting to caramelize.
Top — Spoon marinara over each piece of chicken. Sprinkle with shredded mozzarella.
Finish — Bake 5 more minutes until cheese is melted and bubbly and chicken reaches 165°F internally.
