Harvest Borscht
My Borscht might not be red — and that’s because I used candy beets instead of red beets!
Still rich, hearty, and full of flavour… just with a little pink swirl of personality! 💕
He was definitely interested in the recipe 😄 — and once you taste it, you’ll see why!
Here’s how I made it:
🥣 Ingredients
2 cups diced uncooked beets (I used candy-coloured instead of red)
2 large carrots, diced
1 medium onion, diced
1 cup raw potatoes, diced
1 rib celery, diced
6 to 8 cups broth — chicken, beef, or vegetable
1 tbsp YGY Roasted Garlic Seasoning
1 tbsp Lemon Dill Seasoning or Jalapeño Ranch Dill Pickle Seasoning
2 tbsp white vinegar
Salt & pepper to taste
Simmer everything together until the veggies are tender and the flavours blend beautifully.
It’s not traditional — but it’s really tasty!
Finish it off with a generous spoonful of sour cream for that creamy, tangy touch.
