These savory egg bites are creamy, satisfying, and packed with protein from eggs, cottage cheese, and shredded cheese. Add your favorite vegetables, meats, or spice blends to make them your own. Great for meal prep and easy to reheat!
Ingredients
8–10 large eggs (adjust based on mix-ins)
1 cup cottage cheese
½ tsp salt
¼ tsp black pepper
½ cup shredded cheese (cheddar, mozzarella, or your favorite blend)
Optional mix-ins: chopped spinach, peppers, mushrooms, cooked ham, bacon, sausage

Instructions
Preheat oven to 325 °F. Grease a muffin tin or use silicone cups.
In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
Distribute mix-ins evenly into muffin cups.
Pour egg mixture into each cup, filling about ¾ full.
Bake for 22–25 minutes or until set. Let rest for 5 minutes before removing.
Store in the fridge for up to 3 days or freeze for longer. Reheat in microwave or oven.
