Sesame Ginger Cucumber Salad
Fresh, crunchy and full of sesame ginger flavour, this easy cucumber salad takes about 10 minutes to make and is a delicious way to use summer garden cucumbers.

Ingredients
1 large English cucumber, thinly sliced
¼ cup red onion, very thinly sliced
1–2 tbsp YGY Easy Eats Sesame Ginger Blend
1 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tsp toasted sesame oil
1 tsp sesame seeds, optional
Chilli flakes or chilli crisp, optional
Make It
1. Slice
Thinly slice the cucumber into rounds and add to a bowl with the red onion.
2. Season
Add Sesame Ginger Blend, soy sauce or tamari, rice vinegar and sesame oil.
3. Toss
Toss everything together until the cucumbers are evenly coated.
4. Finish
Add sesame seeds and chilli flakes or chilli crisp, if desired.
5. Serve
Enjoy right away for the best crunch.
🥒 Health It Up
Cucumbers are made mostly of water, making them a refreshing addition to summer meals.
Keep the peel on when you can—it provides some additional fibre and nutrients, including vitamin K.
But my favourite benefit might be the simplest:
Cucumbers make it really easy to eat more vegetables.
Use them in salads, bowls and wraps, or slice them thick and use them instead of crackers with your favourite dips.

Red onion too strong?
Soak the slices in cold water for 10 minutes, drain and add them to the salad.
Want more tang?
Add another splash of rice vinegar.
Want some heat?
Add chilli flakes or a little chilli crisp.
Have regular garden cucumbers instead of English cucumbers?
Absolutely use them. If the skin is tough, peel all or part of it. If they're very seedy, scoop out some of the centre before slicing.
Make It a Meal
This is a great side dish, but adding protein turns it into a more substantial meal.
